A Golden Harvest from the Mustard Fields of Uttarakhand
There is a special moment in the Himalayan foothills when fields come alive with brilliant yellow mustard blossoms. The air carries the promise of a new season, and honey bees move from flower to flower, gathering nectar from this sea of gold.
This is where the story of Himalaya Tree Raw Mustard Honey begins.
Sourced from small-scale farmers in the lower Shivalik region of Uttarakhand, our mustard honey is produced by the European / Western honey bee (Apis mellifera), which gathers nectar primarily from mustard flowers. Unlike multiflora honey, which reflects the diversity of many flowering plants, this honey celebrates the distinctive character of a single floral source.
One Flower. A Distinctive Character.
Made during the mustard flowering season, this honey is naturally known for its delicate sweetness, mild floral character and characteristic pale, buttery-yellow appearance. Its flavour offers a different experience from the deeper, more varied notes of our Raw Forest and Raw Multiflora Honey.
Our mustard honey is associated with the seasonal harvest around late winter and early spring, when mustard fields across the region provide an abundant source of nectar. The changing weather and flowering conditions influence the final character of each batch.
Naturally Creamy. Never Artificially Made That Way.
Mustard honey is naturally prone to crystallisation because of its glucose content. Over time, it may develop a thicker, creamy texture and a lighter, buttery-yellow appearance.
This transformation is a natural characteristic of honey. Crystallisation alone does not mean that the honey has spoiled or been adulterated. It is part of what makes raw mustard honey distinctive.
Our Raw Mustard Honey is unpasteurised and gently strained to remove unwanted residues. We do not add sugar, artificial sweeteners or preservatives. Its natural colour, flavour and texture are allowed to speak for themselves.
From the Mustard Fields to Your Table
Spread it over toast, pair it with warm parathas, drizzle it over breakfast or enjoy it with your favourite foods. Its naturally crystallising texture makes it a distinctive addition to everyday meals.
At Himalaya Tree, we work to connect the harvests of Uttarakhand's small-scale farmers with homes across India, celebrating the diversity of our region's landscapes, seasons and traditional food culture.
Not just honey from mustard flowers, but a taste of a season in the Himalayas.
