Himalaya Tree Raw Forest Honey carries the spirit of Uttarakhand's mountain villages, where life has long followed the rhythm of the seasons, forests and changing blooms. In the old villages of the Himalayas, traditional beekeepers have kept Apis cerana indica in wooden log hives and specially built cavities in the walls of their homes and cattle sheds. Known in parts of Uttarakhand by local names such as Khadra and Jaala (Jalota), these traditional hives reflect the ingenuity of mountain communities, who learned to live alongside bees and make use of locally available materials. This knowledge has passed from one generation to the next, connecting village life with the forests around it.

Sourced from small-scale farmers in Uttarakhand's lower Himalayan region, at elevations of approximately 7,000–10,000 feet, this honey comes from the nectar gathered by the Indian honey bee from a rich diversity of wild and cultivated blossoms. Oak and rhododendron woodlands, wild roses, seasonal herbs, shrubs and other flowering plants contribute to the changing character of the mountain landscape.

Traditionally, our honey is harvested during three seasonal windows: Chaitra (April–May), Ashadh (June–July) and Kartik (October–November). As the seasons turn and different flowers bloom, the honey develops its own distinctive character. No two harvests need to taste exactly alike.
Expect a naturally rich flavour, delicate floral and woodland notes, and a depth that may reveal a gentle, earthy or slightly bitter edge, depending on the floral sources and season. This is honey with a sense of place—not a uniform sweetness, but a reflection of the diverse landscapes from which it comes.

Our Raw Forest Honey is unpasteurised and minimally handled. It is gently strained to remove unwanted residues, without adding sugar, artificial sweeteners or unnecessary ingredients. We preserve its natural character so you can experience the flavour and texture shaped by the season and the forest.
Over time, the honey may crystallise naturally. Its texture and colour may change, but crystallisation alone does not mean that the honey has spoiled. It is one of the natural characteristics of honey.
